If muffins, pies (strawberry-rhubarb!!!) and the rest do not convert you from your wayward heresy, then simply simmer stalks on the stove in water and sugar (and perhaps cloves, cinnamon, etc) for a few hours to make a compote. Then cool it, mix with ice, club soda, and either gin or vodka. Very nice drink, and very subtle flavour.
